Tropical Salsa
- 1 cup diced mango
- 1 cup diced papaya
- 1 cup diced pineapple
- 1 cup diced red onion
- 1/2 cup chopped cilantro leaves
- 1/4 cup cider vinegar
- 2 fresh red or green chile peppers, seeded and minced
- 1 teaspoon crushed red pepper flakes, or to taste
- 1 teaspoon sugar
In a medium mixing bowl, combine all ingredients. Let stand for 20 minutes in the refrigerator before serving.
Yield: 3 cups
One of the perks of living in Costa Rica is the availability of fresh fish purchased directly from the fishermen right off of their boats, from one of the many fish markets or maybe even some you caught yourself on an adventurous fishing trip. This Tropical Salsa is a great way to top off your fish entree, fish tacos or just serve it up with some tortilla chips!
